You could build a middle-ware, that let you connect to it from Companion and forwards the commands to two (or more) Caspar servers. If you need to have some feedback (does companion support that for caspar) you could have a seitch in that middle-ware, that selects the active instance and use it‘s feedback to send back to Companion.
You could also use the official client, it supports having a redundant backup, Companion could then trigger evenzs in it via OSC.
I just broadcast the commands to several IPs.
